Hey all! I pray your holiday was full of love and laughter and minimal stress. Ours was fantastic and seeing family always fills my heart. I did hit one little glitch during our celebrations. The holiday foods were amazing and rich in flavor. The only problem was they created a traffic jam in my intestines (no further details will be given).
In order to get my digestion back on track, I need to eat a predominantly plant based diet. This a.m. I broke out the Vitamix to whip up one of our faves; the Almost-Like Reese’s Smoothie.
RECIPE: To make this you will need:
5-8 ripe frozen (spotted) bananas – peel before freezing
1 3/4 c. Non dairy milk (I used organic coconut milk by So Delicious)
5 Medjool Dates
Cacao Nibs
Natural (no sugar added) peanut butter
Vitamix Blending Directions:
Blend 1tbsp. Of cacao nibs and dates on high in milk first, until smooth or super fine particles remain (45 sec. In the Vitamix) Stop blender then add bananas and 1 tbsp. of peanut butter or more if ya really want it peanutty?. Blend until smooth and creamy. Pour and enjoy!
This serves 4 unless you don’t wanna share!
