Easy Twice Baked Crunchy Granola

Nothing beats the smell of cinnamon toasted oats drenched in pure maple syrup. This homemade crunchy granola staple is preservative-free, slightly sweet, with an added lemon twist to brighten its flavor profile. As a self-proclaimed foodie, I love playing with flavors and texture to create delicious recipes that please the masses.
This recipe is quick to assemble and lower in fat than most store-bought granola. Be sure to cool it completely and store in an airtight container for up to two weeks. I hope you enjoy this extra crunchy, slightly sweetened granola.
Wet Ingredients
¼ Cup Maple Syrup (or honey)
1.5 Tbsp. of Melted Coconut Oil
1 Tbsp. Lemon Juice
1 Tsp. Vanilla Extract
Dry Ingredients
3 Cups of Rolled Oats
½ Tsp Salt (to taste or omit)
1 Tsp Cinnamon (or to taste)
*Optional Raisins, dried fruit and nuts, chia seeds, (chocolate chips after it has cooled)
Instructions
Mix wet ingredients together in a bowl.
Add oats, cinnamon, and salt to wet ingredients
Mix until oats are completely coated. Spread on lined baking pan.
*Bake on 350 for 10 minutes. Remove oats from the oven. Mix oats to ensure all sides brown. Bake for an additional 7-9 minutes. Check frequently.
Remove granola from the oven and let cool completely. Store granola in an airtight container for up to two weeks- if it lasts that long:)
Enjoy as a nutritious cereal or mixed in your favorite yogurt.
